A film crew recently visited the University of California, Davis, laboratories of John M. Krochta (above, left) to tape a segment for the National Geographic series The Human Edge. The series explores new ideas and concepts that represent the advancing edge of human creativity, knowledge and experiences. The film crew interviewed Krochta, who is holder of the Peter J. Shields Chair in Dairy Food Science at UC Davis, and taped laboratory operations, including: * making whey protein films * testing whey protein films for mechanical properties (strength, flexibility and stretchiness) * testing whey protein films for oxygen-barrier properties * coating peanuts with whey protein oxygen- and moisture-barrier coatings * coating chocolate with a whey protein gloss coating as a replacement for shellac * coating cheese with a whey-protein-based anti-mold film Dairy Dispatch Click here to read the full issue of Dairy Dispatch.
